Transylvanian Tradition of Preserving

SEPTEMBER – OCTOBER

Many of us have the impression that preserves are hard work and take a long time and just give up on doing it. We will change this with few traditional preserves adapted to our life style.

We will make tomato and egg plant spread (zacusca), tomato ketchup, sauces and chutneys which all can be enjoyed immediately or preserved for later.

ITINERARY

Day one

Arrive from 2pm – Welcome, we will assist you to accommodate in the location

Welcome beverage and light snack – local peasant dish

Guided visit of the village and the fortified church dating 1810 – part of National Monuments Patrimony

Aperitif and dinner – Introduction and discussions on the workshop themes

Day two

Breakfast with natural products from local farmers

Visit to the local farmers ‘market and free time in Sighisoara- medieval citadel, Unesco Heritage Site

Lunch in Sighisoara – not provided

16:00 – Cooking class –This class will introduce you in the techniques of preserving and how to do it easy at home such that making jams and preserves will be fun and easy. During this class we will make the most popular spread “zacusca”, tomatoes classic sauce and fruit jam.

Dinner with prepared dishes – local brandy and wine included.

After dinner discussions and entertainment.

Day three

Breakfast with natural products from the local farmers

Trip to Viscri, Unesco World Heritage Site, including the shepherding experience, cheese tasting and a picnic packed lunch (changes may occur depend on weather and availability)

16:00 – Baking class – Traditional sweets and festive cheese cake with fresh cheese from the shepherds

Drinks and dinner followed by entertainment with local traditional music.

Day four

Breakfast with natural products from the local farmers

10:00- Hands on Cooking Class – We start with picking greens and vegetables from our own garden from which we will prepare seasonal dishes. A local village cook will cook with us a popular soup, specific for the region, but very easy to do it in your own home and adapt it to your taste.

Lunch with prepared dishes.

Free time in the afternoon – Many activities available will be presented, including visiting interesting historical monuments in the region.

Dinner

Optional – Wine tasting at a local restaurant in Sighisoara – not included

Day five

Breakfast with natural products from the local farmers

Participants will receive brochure with the dishes of the workshop

Check – out until 12:00

HIGHLIGHTS

  • Visit the farmers ‘market and Sighisoara Medieval Citadel- World Heritage Unesco Site
  • Visit the famous village of Viscri were the Prince of Wales himself choose to have his vacation house
  • Cook on wood fire in the same way that villagers in these parts do for hundreds of years
  • Visit a sheep fold, and taste the cheeses made by the shepherd (depend on weather and availability)
  • Learn to cook the incredible preserves that Transylvania is famous for

Changes will be made depending on the season, weather and availability of the activities.
Additional days can be booked on request.

Participants who do not cook are most welcome.

A minimum of 4 persons is required for this program.
